HFTH Recipe: Layered Pumpkin Dessert

Here is a great Autumn dessert or an alternate to the typical pumpkin pie compliments of my mother. It is not a recipe I grew up with, but rather one she acquired from a friend. I like pumpkin pie once or twice a year for the holidays, but would love to try an alternate– maybe one I would enjoy again and again!

Layered Pumpkin Dessert

Crust:
1 1/2 C Flour
1/2 C Margarine (melted)
1/2 C Chopped Pecans
Mix, pat into 9×13 baking pan. Bake at 300F for 30 mins.

First Layer:
8 oz Cream Cheese
1 C Powdered Sugar
12 oz Cool Whip (reserve 1/2)

Mix together and spread over cooled crust.

Second Layer:
1 Envelope of Dream Whip (dry)
1 six oz Package of Instant Vanilla Pudding

2 C of Pumpkin
1 tsp of Pumpkin Spice
1 C of Milk
1/2 tsp Each of Nutmeg, Ginger and Cinnamon

Mix together over the other layers. Spread the remaining Cool Whip on top.

This was so delicious!!  I am sure you can make it a little less calorie intense by replacing lower fat versions of the products (or go for the gold with heavy cream? 😉 ).

    I make the same layered dessert except with chocolate and vanilla pudding mixed together. It's also good with lemon!

  3. Sounds tasty! I'm not a huge fan of pecans, do you think another nut would be ok as a substitue like almonds or maybe graham crackers?
